Last updated: 14 October 2026. We update this guide as 2027 offers come in.
What changes for 2027
- National minimum wage: €920 gross per month since 1 April 2026, up from €880. The government's stated target for 2027 is €950.
- Hotel and tourism agreement: a two-year sector agreement took effect on 1 April 2026, with starting pay of about €930 to €1,100 a month depending on the role, and a further 4% rise scheduled for April 2027. It applies to all workers in the sector, not only union members.
- Bonuses and holiday pay: Greek employment includes Christmas and Easter bonuses and holiday pay. Seasonal staff receive them in proportion to the time they work.
- Competition for staff: good people commit early. Hotels that confirm offers between October and February get the strongest candidates for April openings.
Typical monthly pay by role
Typical net monthly pay offered for 4 and 5-star island hotels and resorts in the 2026 season, based on published job offers. Accommodation and meals are usually included on the islands. Pay varies with the property, the island, languages and experience.
| Role | Typical net pay per month | Usually included |
|---|---|---|
| Sous chef | €1,600 – €1,900 | Housing, meals |
| Chef de partie / Cook A | €1,500 – €1,700 | Housing, meals |
| Demi chef de partie / Cook B | €1,300 – €1,500 | Housing, meals |
| Waiter / waitress | €1,000 – €1,200 | Housing, meals, tips |
| Bartender | €1,100 – €1,200 | Housing, meals, tips |
| Head chef, F&B manager, front office manager, hotel manager | Individual. Ask us | Often a separate room, end-of-season bonus |
Net means after tax and social security. Island offers are usually quoted net; city and permanent roles are often quoted gross. Always check which one an offer uses.
For hotels: what candidates compare
Beyond the salary
Candidates weigh the whole package: the quality of staff housing, meals, days off, transfer to the island, tips, and an end-of-season bonus. A clear, written offer wins against a slightly higher vague one.
Timing
The most experienced seasonal staff sign for the next summer between October and February. If you are opening in April, start your search now.
For candidates: comparing offers
- Ask whether pay is net or gross, and how many days off you get each week.
- Ask what housing looks like (shared or private room, distance to work) and whether meals are included on days off.
- Check who pays your travel to the island and whether there is an end-of-season bonus.
- Get everything in writing before you travel. A genuine employer or agency never asks you for money to get a job.
